Fried Octopus(Octopus Fritti) - cooking recipe

Ingredients
    3 lb. small octopus
    1 c. flour
    1/4 tsp. pepper
    olive oil for frying
Preparation
    Clean
    octopus
    by
    soaking
    in salt water and pounding octopus against side of bowl.
    This helps remove any sand that may be
    trapped
    in
    suction cups.
    Cut off head and only use tentacles.
    Wash,
    rinse
    and drain again.
    Cut with scissors, keeping
    2
    tentacles together.
    Drain octopus in colander and place
    flour
    in
    bowl with pepper.
    Heat oil in large skillet and dip
    octopus
    in flour and then into oil.
    Fry on medium-high heat, cooking about 8 minutes on each side.
    Brown well, but
    be careful not to burn.
    To serve, place on warm platter with
    lemon wedges,
    if desired.
    Keep warm in oven until all frying is complete.
    Makes 5 to 6 servings.
