Hoppin John 'N' Sausages - cooking recipe

Ingredients
    1 lb. sweet Italian sausage, sliced
    1 medium onion, chopped
    1 smal green pepper, chopped
    1 1/2 c. long grain rice, cooked
    2 (10 oz.) pkg. frozen black-eyed peas, cooked and drained
    salt and pepper
    melted bacon drippings or olive oil
Preparation
    Bake sausage one layer deep in pan, uncovered, in 325\u00b0 oven for 1 hour.
    Drain sausage drippings into large skillet; stir-fry onion and pepper until tender.
    Place in large bowl.
    Add sausage, rice, peas, salt and pepper and bacon drippings.
    Pour in casserole and bake at 325\u00b0 for 1 hour.
    Makes 8 servings.
