Boston Baked Beans - cooking recipe

Ingredients
    2 lb. dried beans
    1 lb. salt pork
    8 Tbsp. sugar
    2/3 c. molasses
    2 tsp. dry mustard
    4 tsp. salt
    1/2 tsp. pepper
    1 medium onion
Preparation
    Soak beans overnight.
    In the morning, parboil them for 10 minutes with a teaspoon of baking soda. Run cold water through the beans in a colander or strainer.
    Dice a rind of salt pork in 1-inch squares.
    Divide into 2 portions.
    Put half of the pork in the bottom of a 2-quart bean pot with whole onion.
    Put beans into pot.
    Put the rest of the pork on top.
    Mix all other ingredients with water and pour over the beans.
    Put in a 300\u00b0 oven for 6 hours.
    Makes 10 portions.
