Chicken And Sausage Gumbo - cooking recipe

Ingredients
    1 pkg. chicken breasts
    1 lb. sausage, sliced
    1 to 2 c. celery, chopped
    1 to 2 c. green onions, chopped
    1 bell pepper, chopped
    salt and pepper
    2 Tbsp. flour
    1/4 c. cooking oil
Preparation
    Boil chicken (season with salt and pepper), cool and debone. Make homemade roux by browning flour in cooking oil until dark brown (adjust the amount of cooking oil and flour if necessary). Add this to broth and stir completely.
    Add onions, celery, bell pepper, sausage and chicken pieces.
    Bring to a boil and then cook on low to medium heat for 30 minutes to an hour.
    Serve over rice with crackers.
