Mom'S Frittata Di Patate(Potatoes) - cooking recipe
Ingredients

5 baking potatoes
5 large size eggs
salt and pepper to taste
1 Tbsp. Parmesan cheese
olive oil
Preparation

Peel and cut potatoes either in round slices or side slices. Wash the potatoes under cold water; drain.
Pat dry and season with salt and pepper.
Put a large, nonstick frying pan (or one sprayed with Pam) on medium-high heat.
When pan is hot, add enough oil to fully coat bottom of pan.
When oil is hot, add potatoes to the pan and fry on medium-high heat, turning them often so that all potatoes will be crispy and golden.
