Lemon Meringue Pie - cooking recipe
Ingredients

1 (9-inch) pastry shell, baked
1 1/4 c. sugar
1/8 tsp. salt
6 tsp. cornstarch
2 c. boiling water
grated rind of 1 lemon
4 tsp. margarine
3 egg yolks
1/2 c. lemon juice
Preparation

In a saucepan, mix sugar, salt and cornstarch together.
Add water and grated rind.
Cook over medium heat until mixture begins to thicken, stirring frequently.
Reduce heat and simmer 10 minutes.
Stir hot mixture into egg yolks which have been mixed with lemon juice.
Strain into baked pie shell.
Bake at 400\u00b0 for 10 minutes.
Top with meringue.
