Chicken With Peppers Mex Style - cooking recipe

Ingredients
    1 broiler fryer (3 lb.), cut up
    2 Tbsp. vegetable oil
    1 large onion, cut lengthwise into eighths, separated
    1 clove garlic, minced
    1/4 lb. diced cooked ham
    1 (1 lb.) can Italian plum tomatoes
    1 tsp. salt (optional)
    1/4 tsp. black pepper
    1/4 tsp. leaf oregano
    1/4 tsp. thyme
    1 green pepper, halved, seeded and cut into strips
    1 small red pepper, seeded and cut into strips
    1/3 c. pimento-stuffed olives, sliced
    1/3 c. ripe olives, sliced
    hot cooked rice
    2 Tbsp. chopped parsley
Preparation
    Brown chicken in oil in a large skillet.
    Remove to bowl. Drain drippings in a glass measure.
    Return 2 tablespoons to skillet.
    Saute onion, garlic and ham.
    Add tomatoes, salt, pepper, oregano and thyme.
    Bring to boiling.
    Cook over high heat, stirring occasionally, until most of the liquid has evaporated, about 10 minutes.
