Vidalia Onion Casserole - cooking recipe

Ingredients
    3 to 4 medium Vidalia onions, sliced
    1 c. grated Millet Cheese (refer to Millet Cheese recipe)
    1 pkg. whole wheat crackers
    8 oz. soft tofu
Preparation
    Mix first 3 ingredients.
    Pour into 9 x 13-inch casserole dish sprayed with Pam.
    Crush whole wheat crackers and spread evenly on top of casserole.
    Dot with olive oil.
    Bake at 350\u00b0 for 45 minutes.
