Tabooley - Arabic(Wheat Garden Salad) - cooking recipe

Ingredients
    1 c. cracked wheat (fine)
    1 bunch green scallions
    1 large bunch parsley
    1/2 c. fresh mint leaves
    4 large tomatoes
    1/3 c. salad or olive oil (optional)
    salt and pepper to taste
    juice of 4 or 5 fresh lemons
    1 or 2 long thin cucumbers
Preparation
    Soak wheat in water for 5 minutes.
    Squeeze wheat dry by pressing between palms.
    Chop onions, parsley, mint leaves, tomatoes and cucumbers nice and fine.
    Add lemon juice, oil, wheat and seasoning and mix well.
