Crawfish Or Shrimp Etouffee - cooking recipe
Ingredients

1/4 c. butter or oleo
1 c. small chopped onion
1/3 c. celery, chopped
1/3 c. green pepper, chopped
dash of each: red and black pepper
Tabasco sauce to taste
1 can cream of mushroom soup
1 Tbsp. sugar
1 tsp. salt
1/2 c. green onion, chopped
1 clove garlic
1 small can tomato sauce
1/4 c. chopped parsley
2 1/2 qt. water
3 1/2 c. shelled and deveined crawfish tails or shrimp
Preparation

Melt butter in a large heavy pot (iron preferred).
Saute onions, garlic, green pepper and celery until onions are clear. Stir in all ingredients except crawfish (or shrimp).
Simmer 30 minutes on low heat.
Stir occasionally.
Add crawfish (or shrimp) tails; simmer 25 minutes over medium heat.
Serve over cooked rice.
