Quick Pineapple Cake - cooking recipe
Ingredients

1 can crushed pineapple
1/2 c. coconut, shredded
1 c. flour (self-rising)
1 c. sugar
1 c. milk
1 tsp. vanilla
1 stick butter or margarine
1/2 tsp. cinnamon
Preparation

In 9-inch deep pan, melt buttermilk, flour, sugar, milk and vanilla.
Beat until blended.
Drain pineapple (save juice).
Pour flour mixture in butter.
Spread coconut, then spread pineapple. Do not stir.
Sprinkle cinnamon on top.
Bake at 375\u00b0 for 45 minutes to 1 hour or until springs back when touched.
Pour pineapple juice over while hot.
Let cool; cut into squares. Serve with whipped cream.
