Colonial Pecan Carrot Cake With Orange Glaze - cooking recipe

1 1/4 c. cooking oil
2 c. sugar
2 c. sifted flour
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
4 eggs
6 grated raw carrots
1 c. chopped pecans
Preparation

Combine oil and sugar; mix well.
Sift together remaining dry ingredients.
Sift 1/2 of dry ingredients into the sugar mixture; blend well.
Then add the remaining dry ingredients alternately with eggs, one at a time, mixing well after each addition.
Add carrots and mix well, then mix in pecans.
Pour into lightly oiled 10-inch tube pan.
Bake in slow oven (325\u00b0) for about 1 hour and 10 minutes.
Cool with pan upright.
Frost with Orange Glaze.
