Mimi'S Carrot Cake - cooking recipe
Ingredients

2 c. sugar
1 1/2 c. oil
4 eggs
2 c. sifted flour
2 tsp. cinnamon
2 tsp. nutmeg
1 tsp. soda
1/2 tsp. salt
2 tsp. baking powder
3 c. grated raw carrots
1 c. chopped walnuts
Preparation

Mix and beat well sugar, oil and eggs.
Add dry ingredients and mix well.
Add carrots and nuts and mix well.
Bake in greased and floured 8-inch pans (2 thick layers or 3 thinner layers) or a 13 x 9-inch pan for 30 minutes at 350\u00b0.
(It only takes 3 to 4 good sized carrots to make 3 cups!)
