Salmon Souffle - cooking recipe
Ingredients

1 (No. 1) can salmon, remove skin and bones
2 Tbsp. butter
3 Tbsp. flour
1 c. milk
4 eggs
1/4 tsp. thyme
1/2 tsp. curry powder
salt and pepper
Preparation

Make cream sauce with melted butter, blending flour and adding milk.
Cook for 2 to 3 minutes.
Remove from heat.
Add yolks of eggs and salmon.
Stir well and fold in stiffly beaten egg whites. Put in buttered casserole with straight sides.
Bake at 375\u00b0 for 35 minutes.
