Blueberry Yogurt Muffins - cooking recipe

2 c. whole-wheat flour
1/3 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/4 c. orange juice
1 tsp. vanilla
1 (8 oz.) carton low-fat plain yogurt
1 egg, lightly beaten
1 c. fresh or frozen blueberries (thawed if frozen)
1 Tbsp. sugar
Preparation

Combine first 5 ingredients in a large bowl. Combine orange juice and next 4 ingredients in a bowl. Mix the two bowls together; stir until moist. Fold in berries. Divide batter into muffin cups lined with paper or sprayed with oil. Sprinkle tops with extra tablespoon of sugar, if desired. Bake at 400\u00b0 for 16 to 18 minutes.
