Bass'S Green Eggplant Supreme - cooking recipe

Ingredients
    6 small tender green eggplants
    2 small pieces celery
    1 tsp. sugar
    1/2 to 3/4 tsp. pepper
    1 small onion
    1 small bell pepper
    1/2 to 3/4 tsp. salt
    1/2 stick margarine
Preparation
    Cut green eggplants (sometimes called white) into small pieces. Finely chop other ingredients.
    Place 3/4-inch of water in saucepan with seasonings.
    Bring to hard boil.
    With heat on high, continue to boil.
    Add other items, cover and occasionally.
    When tender, remove lid and continue to boil all liquid out.
    Stir frequently. Add margarine when melted.
    Remove from burner.
    Cover until ready to serve.
