Ingredients

2 Tbsp. cornstarch
1 c. pineapple juice
1/2 c. crushed pineapple
1/4 c. apple cider vinegar
1/2 c. sugar
1 Tbsp. margarine
1 can sliced beets
Preparation

Mix 1/2 pineapple juice and cornstarch to make a smooth paste.
Add the rest of juice, pineapple and drained beets.
Cook on medium heat; stir often to keep from sticking or lumping.
Heat thoroughly.
Serve hot or cold.
