Dirty Rice - cooking recipe

Ingredients
    1 (6 oz.) box chopped livers
    1 (6 oz.) box chopped gizzards
    1 lb. ground beef or 1/2 lb. beef and 1/2 lb. pork
    1/2 c. shortening
    1 c. bell pepper, chopped
    1 c. onions, chopped
    1 c. celery, chopped
    2 cloves garlic, chopped
    salt and pepper
    1 lb. or 2 c. rice, cooked
Preparation
    Parboil livers and gizzards in 3 cups water.
    Keep stock. Simmer ground meat in shortening for 20 minutes. Add livers, gizzards, chopped vegetables and seasonings.
    Cook 20 more minutes. Add 2 cups stock and simmer for 20 minutes. Add and mix in rice when ready to serve. Serves 12.
