Ricotta Cheese Pancakes - cooking recipe

Ingredients
    1 c. Ricotta cheese
    1 tsp. baking powder
    3 eggs
    2 Tbsp. melted butter
    2 tsp. sugar
    1/2 c. sifted unbleached white flour
    2/3 c. milk
    1 tsp. vanilla or 1/4 tsp. orange extract (optional)
Preparation
    Combine ingredients; beat until smooth.
    Pour mixture onto a lightly greased, preheated grill in 2-inch rounds over a medium-low heat.
    Turn cakes when small bubbles form on surface. Serve hot, dusted with powdered sugar or maple syrup.
    Also good with strawberry or raspberry preserves.
    Serves 3 to 4.
