Broccoli Cheese Rice Casserole - cooking recipe
Ingredients

2 boxes Uncle Ben's long grain and wild rice
2 pkg. frozen chopped broccoli, prepared as directed
1 (14 1/2 oz.) can chicken broth (low salt variety)
2 (8 oz.) cans whole water chestnuts, drained
2 (8 oz.) cans chopped mushrooms, drained
2 c. grated nonfat Cheddar or 16 oz. Kraft Free cheese slices, chopped
1 c. homemade low-fat prepared croutons, crushed
1 to 1 1/2 tsp. Mrs. Dash salt-free extra spicy seasoning
Preparation

Prepare rice as directed on package.
Add the cooked broccoli, mushrooms, water chestnuts and chicken broth to the rice mixture. Add seasoning and the grated nonfat cheese.
Spoon into large casserole dish that has been sprayed with a nonfat cooking spray. Top with homemade low-fat croutons.
Bake at 350\u00b0 for 30 to 35 minutes, covered.
Remove cover the last 10 minutes.
Serves 12 to 14.
