Salmon Medley - cooking recipe
Ingredients

1 1/2 c. cooked salmon or canned, flaked
2 boiled potatoes, diced
2 Tbsp. green, yellow and/or red sweet peppers, chopped
1/4 c. onion, chopped
pinch of cayenne pepper
salt and pepper to taste
2 Tbsp. parsley, minced
3 Tbsp. olive oil
1/4 c. heavy cream
Preparation

In a bowl, combine all ingredients, except olive oil and cream.
In a skillet, heat olive oil.
Add salmon mixture and flatten with back of a spatula.
When the mixture begins to develop a crust on the bottom, flip over with spatula.
Add cream and turn up heat to thicken sauce and brown other side quickly. Garnish with avocado slices and add salsa to taste.
Makes 2 servings.
