Top Of Stove Supper - cooking recipe

Ingredients
    1 Tbsp. butter or margarine
    2 potatoes, thinly sliced
    1/2 tsp. salt
    1/4 tsp. pepper
    1 Tbsp. diced onion
    1 Tbsp. diced green pepper
    1 c. diced cooked ham
    2 eggs, slightly beaten
    1/4 c. (1 oz.) shredded Cheddar cheese
Preparation
    Melt butter in a large, heavy skillet.
    Layer next 6 ingredients in skillet.
    Cover and cook over low heat 30 minutes. Pour eggs over ham mixture; cook an additional 15 minutes. Sprinkle with cheese.
    Cover and cook 5 minutes or until cheese melts.
