Shrimp And Scallops With Capers - cooking recipe

Ingredients
    handful sliced black olives
    2 thinly sliced deseeded lemons
    1/2 lb. peeled, deveined shrimp
    1/2 lb. scallops
    handful chopped fresh Italian parsley
    handful sliced mushrooms
    sprinkle of crushed red pepper
    thinly sliced sundried tomatoes
Preparation
    Spray a flat casserole and lid with vegetable spray.
    Put in all ingredients.
    Drizzle with olive oil and toss.
    Bake, covered, for 7 minutes at 400\u00b0.
    Remove, toss and return to oven for 7 more minutes.
    Remove, toss and return to oven for about 5 more minutes.
    Serve on saffron rice with a nice Caesar salad and some good French bread-yum! Serves 2.
    Recipe is easily doubled or tripled, but cooking time has to be adjusted, of course.
