Roasted Garlic And Parmesan Mashed Potatoes - cooking recipe

Ingredients
    10 garlic cloves, peeled
    1/4 c. olive oil
    3 to 3 1/2 lb. Russet potatoes, peeled and chopped
    1 tsp. salt
    1 1/2 c. half and half or milk
    1 c. sour cream
    3 Tbsp. butter, softened
    1 c. Parmesan cheese, shredded and divided
Preparation
    Preheat oven to 350\u00b0.
    In a small ovenproof cup or bowl, combine garlic and olive oil.
    Cover and bake about 25 minutes or until garlic is very soft.
    Leaving oven on at 350\u00b0
    to bake potatoes later, remove garlic from oven and let cool.
    Mash with fork, reserving oil.
    While garlic is roasting, place potatoes in a pot and cover with water.
    Add salt and bring to a boil.
    Let cook until tender.
    Drain potatoes and place in large bowl.
    Add half and half, sour cream, butter, mashed garlic and half of reserved olive oil to potatoes.
