Potato Candy - cooking recipe
Ingredients

1/2 c. cold potatoes, mashed
4 c. sifted confectioners sugar (or enough to make fondant easy to handle)
pinch of salt
1/2 tsp. vanilla
Preparation

Mix well, then turn out on a piece of waxed paper and roll into a rectangle about 1/4 inch thick.
Spread with 1/2 cup of peanut butter (creamy or chunky style).
Roll up like jelly roll and chill for about 8 hours.
Cut into 1/4-inch thick slices.
