Potato Casserole - cooking recipe
Ingredients

2 c. hot or cold mashed potatoes
2 eggs
1 small onion, diced fine
1 (8 oz.) pkg. cream cheese (room temperature)
2 Tbsp. flour
salt and pepper to taste
1 can French fried onion rings (optional)
Preparation

Beat all ingredients together at low speed until well blended, then beat on high speed until light and fluffy.
Place in greased 9-inch casserole. Bake 35 minutes at 350\u00b0.
Last 10 minutes, top with onion rings if desired. Serves 6.
