Jamaican Red Beans And Rice - cooking recipe

Ingredients
    1 coconut
    4 (15 oz.) cans red kidney beans
    2 c. rice
    salt
    1 small onion, minced
    1 blade green onion, chopped
    water
Preparation
    Break and remove coconut from shell; wash and grate coconut very fine.
    Add water to grated coconut; mix and squeeze milk from the grated nut.
    Get at least 4 cups of milk.
    Place milk in pot. Add salt to taste, onion and green onion and bring to a boil.
    Add rice and water from cans of kidney beans.
    Return to boil, then cover and simmer on low heat.
    When rice is almost cooked, add beans and finish cooking.
