Lo-Cal Zucchini Casserole - cooking recipe

Ingredients
    4 c. shredded zucchini
    1/2 c. onion, chopped fine
    1 1/4 c. grated low-fat Monterey cheese
    1 (2 oz.) jar chopped pimientos
    1/4 tsp. salt
    1 c. egg substitute
    2 Tbsp. picante sauce
    dash of cayenne pepper
Preparation
    Mix all together and pour into oiled or sprayed casserole. Bake 45 minutes in 350\u00b0 oven.
