Clam-Vegetable Stuffing - cooking recipe

Ingredients
    1 1/2 c. chopped, unpeeled zucchini
    3 c. bread cubes, toasted (4 slices bread)
    1 (6 1/2 oz.) can clams, drained or 1 (8 oz.) can oysters, drained and chopped
    1/3 c. chicken broth
    1/2 tsp. dried basil, crushed
    1 1/2 c. thinly sliced carrot
    1 1/2 c. sliced fresh mushrooms
    1 beaten egg
    1/4 tsp. ground sage
Preparation
    Cook zucchini and carrot, covered, in boiling salted water 3 minutes or until crisp-tender.
    Drain.
    Toss with bread cubes, mushrooms and clams or oysters.
    Combine chicken broth, egg and herbs.
    Pour over stuffing mixture.
    Toss until moistened.
    For a moister stuffing, add more broth.
    Turn into a 2-quart casserole. Bake, covered, at 350\u00b0 for 40 minutes or until stuffing is heated through.
    Serves 12, 60 calories per 1/2 cup.
