Vegetarian Supper - cooking recipe

Ingredients
    1 c. uncooked rice
    1/2 c. chopped onion
    2 minced garlic cloves
    2 Tbsp. oil
    1 c. chopped coarsely zucchini
    1 c. chopped green onion
    1/2 tsp. oregano
    1/4 tsp. salt
    1/8 tsp. pepper
    2 c. chopped tomatoes
    1 (16 oz.) drained kidney beans
    1 c. shredded Cheddar cheese
Preparation
    Cook rice; use package directions.
    In large skillet, saute onion and garlic in oil until tender.
    Add zucchini, green onion, pepper, oregano and salt.
    Cook until crisp and tender, about 5 minutes.
    Add tomatoes and beans; cover and heat through.
    Serve on hot rice and sprinkle with cheese.
    Serves 7.
