"Wild Bill'S" Deer Gumbo - cooking recipe
Ingredients

1 c. flour
1 c. oil
3 c. chopped onions
2 c. chopped celery
1 c. chopped bell pepper
2 small cans beef broth
1 qt. tomatoes
2 qt. water
2 lb. venison, cut bite size
2 pinches Accent
2 pinches meat tenderizer
2 pinches Season-All
2 pinches salt
Preparation

To form roux, mix flour and oil; cook on low heat until dark brown.
Boil venison until tender.
Saute onions, pepper and celery in butter until tender.
Combine roux, venison, vegetables, spices, tomatoes, water and beef broth in large pot.
Bring to boil, then simmer 1 hour, stirring regularly.
Add Cajun seasoning to taste.
Serve over rice.
Serves 8 to 10 people.
