Mocha Nut Fudge - cooking recipe

Ingredients
    1 Tbsp. instant coffee
    1 c. hot water
    3 c. light brown sugar
    2 Tbsp. butter
    2 tsp. vanilla
    1 1/2 c. chopped walnuts
Preparation
    Dissolve coffee in water, then combine with sugar in deep, heavy pan.
    Cook, stirring constantly, to soft-ball stage (235 degrees).
    Remove from heat and add butter.
    Cool, without stirring, to lukewarm.
    Beat until thick and creamy; mix in vanilla and nuts.
    Pour into buttered pan and chill. Cut into squares.
