Vidalia Onion Pie - cooking recipe

Ingredients
    3 to 4 large Vidalia onions
    1 c. grated cheese
    1 c. broken Ritz crackers (24)
    2 large eggs, beaten
    1 c. half and half or whole milk or 1/2 c. cream and 1/2 c. milk
    1 tsp. salt
    2 Tbsp. butter or margarine
    1/4 c. chopped bell pepper
    1 small jar diced pimento
Preparation
    Saute onions, pepper and pimento in butter 5 to 6 minutes. Pour into 8-inch greased baking dish.
    Beat eggs, milk and salt. Sprinkle cheese evenly over onion mixture.
    Pour egg and milk mixture over all.
    Top with broken crackers.
    Bake 25 to 30 minutes at 350\u00b0 or until firm.
