Herbed Home Fries - cooking recipe

Ingredients
    4 leftover baked or boiled potatoes
    4 Tbsp. butter, margarine or oil
    4 tsp. chopped onion
    dash of salt
    dash of pepper
    2 tsp. fresh herbs, minced (chives and/or thyme work well)
Preparation
    Dice potatoes into 1/2-inch cubes or slice 1/4 inch thick. Saute potatoes over medium heat in butter, margarine or oil.
    Add onion, salt and pepper to taste.
    Saute potatoes until golden brown.
    Add 2 teaspoons minced herbs, such as chives and/or thyme. Stir to coat potatoes with herbs and serve immediately.
