Sausage, Peppers And Rice Casserole - cooking recipe

Ingredients
    1 lb. mild Italian sausage (can use turkey sausage)
    1/4 c. water
    1 Tbsp. olive oil
    2 sweet onions, coarsely chopped
    1 clove garlic, minced optional
    1 large green pepper coarsely chopped
    1 Tbsp. chopped fresh basil or 1 tsp. dried
    Salt and freshly ground pepper
    1 1/2 c. basmati or good quality long grain white rice
    3 1/2 c. low sodium chicken broth or water
    1 bay leaf
    About 1/2 c. grated parmesan cheese
Preparation
    Preheat the oven to 350\u00b0. In a large casserole, heat the Italian sausage with 1/4 cup water over high heat and cook for 6 minutes, or until the water is gone. Remove the sausage and let cool slightly. Slice the sausage into 1 inch pieces and set aside.
