Mexican Pork Stew - cooking recipe

Ingredients
    1 lb. pork tenderloin, cut into 1-inch cubes
    1 tsp. oil
    1 large onion, coarsely chopped
    1 tsp. minced garlic
    1 (16 oz.) can tomatoes, chopped
    1 green bell pepper, coarsely chopped
    2 Tbsp. chopped green olives
    1 tsp. capers
    1 Tbsp. chopped jalapeno pepper
    2 Tbsp. chopped parsley
    1/2 tsp. cumin
    1/2 tsp. oregano
    1/4 tsp. thyme
    1/2 tsp. salt
    freshly ground pepper to taste
Preparation
    Brown pork in oil in skillet over medium-high heat.
    Add onion and garlic.
    Cook for 2 minutes, stirring constantly.
    Add remaining ingredients; mix well.
    Bring to a boil; reduce heat. Simmer, covered, for 15 minutes.
    Yield:
    4 servings.
