Summer Vegetable Medley - cooking recipe

Ingredients
    1 large onion, chopped
    1 c. uncooked rice
    4 tomatoes, peeled and chopped
    1 1/2 c. beef consomme
    1 eggplant, peeled and cubed
    1 green pepper, chopped
    3 medium summer squash, sliced
    1 Tbsp. vegetable oil
Preparation
    Oil a covered casserole large enough to hold mixture.
    Combine rice and vegetables in casserole.
    Pour consomme over mixture. Cover casserole.
    Put in oven and bake at 350\u00b0 for 45 minutes. Remove casserole from oven.
    Stir gently and return to oven, uncovered, for about 15 minutes or until liquid is absorbed.
