Spicy Cole Slaw - cooking recipe
Ingredients

1 head cabbage, shredded
1 (16 oz.) can black-eyed peas
1/2 c. chopped roasted peanuts
1 to 2 pickled jalapeno peppers, seeded and minced
1/4 c. white wine vinegar
2 Tbsp. soy sauce
1 tsp. ginger
2 Tbsp. olive oil
salt and pepper to taste
Preparation

Combine cabbage, black-eyed peas, peanuts and peppers in a salad bowl.
Mix well.
Whip vinegar, soy sauce, ginger and olive oil in a small bowl.
Add peanut oil in a thin stream, whisking until well mixed.
Pour over vegetables, tossing to coat.
Chill until serving time.
