Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    1 medium onion, chopped
    2 Tbsp. butter, melted, or margarine
    2 eggs, slightly beaten
    1 1/2 c. sweet milk
    1/4 tsp. salt
    pepper to taste
    1/2 c. sharp cheese, grated
    1/2 c. cracker crumbs
Preparation
    Cook eggplant and onion in boiling water for 10 minutes, covered.
    Drain and mash.
    Add margarine, eggs, milk and seasoning; mix.
    Pour into slightly greased casserole dish.
    Combine cheese and bread crumbs as a topping.
    Bake for 25 minutes at 375\u00b0 or until light brown.
