Cream Of Potato-Vegetable Soup - cooking recipe
Ingredients

4 medium potatoes, peeled and cubed
4 carrots, peeled and cubed
4 stalks celery, chopped
1 large chopped onion
2 cans chicken broth (Campbell's)
salt
pepper
parsley
Preparation

In large pan, place potatoes, carrots, celery and onions.
Add enough water to cover vegetables and salt to taste.
Cover and boil until tender.
With potato masher, mash the vegetables in the cooked liquid.
Saute 1/4 pound butter and 1/2 cup chopped onion until tender.
Add 2 tablespoons flour and make roux.
Add chicken broth and flour mix to vegetables.
Simmer for 15 minutes.
Add parsley.
