Russian Easter Cheese(Cirnaya Paska) - cooking recipe
Ingredients

3 lb. cottage cheese, small curds
1 cup softened butter
1 cup sugar
4 egg yolks
1 tsp. vanilla
1/2 cup dried apricots, raisins, nuts or other fruits for garnish
Preparation

Completely drain the whey (liquid) off the cottage cheese with a strainer.
Allow to drain until no liquid is left.
Cream the butter into the sugar and the egg yolks, mix well.
Stir in the vanilla, mix well.
Place a dish towel in a souffle dish and pour in the cheese mixture.
Fold the towel over the mixture and place weigh down with a heavy object.
A small plate that fits inside the dish works well with a large can used for a weight.
Refrigerate for 24 hours and drain off any excess liquid.
Unwrap the cheese and garish with apricots, raisins, nuts or other dried fruit of your choice.
You can slice this into small slices if you desire.
