Healthful Beef Stew - cooking recipe

Ingredients
    2 lb. lean chuck, cubed
    1/4 c. flour
    2 Tbsp. oil
    1 c. chopped onion
    2 cloves garlic, minced
    2/3 c. diced celery
    1/4 c. chopped parsley
    1/2 tsp. rosemary
    1/4 tsp. thyme
    1/2 tsp. black pepper
    1/4 tsp. oregano
    1/2 c. dry wine
    1 c. water
    2 c. tomatoes, chopped
    4 medium potatoes
    4 c. diced carrots
Preparation
    Coat beef with flour and brown in oil in large container.
    Add onion and garlic and cook until softened.
    Pour off excess fat. Add celery, spices, water and wine and bring to boil.
    Reduce heat, cover and simmer 1 hour.
    Add tomatoes, potatoes and carrots.
    Simmer 45 minutes or until vegetables are tender.
    Makes 8 servings.
