Spinach Frittata * - cooking recipe

Ingredients
    1 lb. spinach, washed and trimmed
    1/4 c. oil
    6 eggs
    1/4 c. matzo meal
    salt and pepper to taste
    nutmeg to taste
    2 scallions, finely chopped
    3 Tbsp. chopped parsley or coriander
Preparation
    Wilt spinach with 2 tablespoons oil.
    Drain.
    In large bowl, beat eggs lightly.
    Add remaining ingredients, except oil.
    Heat oil in heat bottomed and broiler proof skillet.
    Pour in mixture; cook over gentle heat until bottom sets.
    Place in broiler until lightly browned and set.
    Turn out onto platter.
    Cut like a cake. Eat hot or cold.
    Yields 4 to 6 good slices.
