Easy Chicken Divan - cooking recipe

Ingredients
    1 (3 1/2 to 4-lb.) chicken, broiler-fryer, cut in half
    2 (10-oz.) pkgs. frozen broccoli spears, thawed and coarsely chopped
    2(10 3/4-oz.) cans cream of chicken soup
    1 c. mayonnaise
    1 1/2 tsp. lemon juice
    3/4 tsp. curry powder
    1/2 c. (2-oz.) shredded sharp cheddar cheese
    3/4 c. herb-seasoned stuffing mix
Preparation
    Combine chicken and enough water to cover in a Dutch oven; bring to a boil.
    Cover, reduce heat, and simmer for 40 minutes or until tender.
    Remove chicken, reserving broth for other uses.
    Let chicken cool.
    Skin, bone and cut into bite-size pieces, set aside. Place broccoli in a lightly greased 11X7X1 1/2-inch baking dish. Top with chicken.
    Combine soup and next 3 ingredients, pour over chicken.
    Sprinkle with cheese and stuffing mix.
    Bake at 400 degrees for 25-30 minutes or until thoroughly heated.
    Yield:
    6-8 servings.
