Herbed Grill Vegetables - cooking recipe
Ingredients

1 1/2 Tbsp. olive oil
1 large sweet pepper, cut in strips
2 small zucchini, julienned
2 small yellow summer squash, julienned
1 tsp. fresh thyme or 1 tsp. dried
1 tsp. fresh oregano or 1/2 tsp. dried
1/4 tsp. black pepper
Preparation

In a medium bowl, toss the red pepper, zucchini and squash with thyme, oregano and black pepper.
Drizzle 1 teaspoon of oil over vegetables and toss well.
Spread vegetables in a single layer on rack.
Cook vegetables 8 inches from heat until golden brown on both sides (3 to 4 minutes each side).
Yields 4 servings.
