Irish Stew - cooking recipe

Ingredients
    1 1/2 lb. lamb, cut in pieces for stew
    3 Tbsp. cooking oil
    2 tsp. salt
    pepper to taste
    5 medium potatoes, peeled
    5 carrots, cut crosswise
    1 medium onion
    2 1/2 c. water
    parsley
Preparation
    Wipe meat with damp cloth; dredge in flour and brown slowly in oil on all sides.
    Add 1 cup water. Cover and simmer 45 minutes. Add salt, pepper, diced potatoes, carrots and onion with 1 1/2 cups water.
    Continue simmering until tender. Add parsley before serving.
