Ingredients

1/2 c. brown sugar
1/8 c. water
1 c. heavy coconut
milk
3 eggs
1/4 tsp. grated lemon rind
1/2 c. white sugar
Preparation

Combine brown sugar and water in saucepan; stir until caramelized.
Pour half into mold.
Beat eggs slightly and add to mixture.
Add remaining ingredients and cook over low heat. Strain through a cloth into mold.
Place mold in a pan of water and continue heating for about 1 1/2 hours.
Allow to cool thoroughly before unmolding.
