Creole Vegetables - cooking recipe

Ingredients
    2/3 c. olive oil
    4 large summer squash, cut into 3/4-inch slices
    6 large tomatoes, cut into 3/4-inch slices
    3 Bermuda onions, cut into 1/4-inch slices
    3 medium green peppers, cut into 1/2-inch rings
    2 tsp. salt
    1/4 tsp. pepper
Preparation
    Heat oil in large skillet.
    Add vegetables; season.
    Cover. Simmer 30 minutes or until tender.
    Serves 8.
