Chili Verde - cooking recipe
Ingredients

3 lb. lean pork
2 onions, chopped
2 cloves garlic, minced
1 large can diced green chilies
2 cans Mexican stewed tomatoes
dash of red pepper flakes
1 1/2 tsp. oregano
1 tsp. ground cumin
1/2 c. chopped cilantro
splash of wine vinegar
sour cream, lime wedges and tortillas
Preparation

Cut pork into 3-inch cubes and saute in oil in small batches until lightly browned.
Remove from pan and saute onions, garlic and green pepper.
Return meat to pan.
Add rest of ingredients and salt and pepper to taste plus dash of red pepper flakes.
Cover and simmer until meat is tender (1 to 2 hours) and sauce is rich and thick.
Add water during cooking if necessary.
Spoon onto hot tortillas with a dollop of sour cream and squeeze of lime juice. Roll up to eat.
