Zucchini Pancakes(Yields 4 Servings) - cooking recipe

Ingredients
    1 1/2 c. grated zucchini
    2 Tbsp. grated onion
    1/4 c. Parmesan cheese
    1/4 c. flour
    2 eggs
    2 Tbsp. mayonnaise
    1/4 tsp. oregano
    salt and pepper
Preparation
    Squeeze excess water out of grated zucchini (press dry between paper towels).
    Combine all ingredients, mixing well.
    Melt 1 tablespoon butter in skillet.
    Spoon 2 heaping tablespoons mixture into skillet and flatten with spatula.
    Brown both sides on medium heat.
    Serve warm with sour cream.
